Vegetarian Tacos


Dinner


So, tonight I made vegetarian tacos for dinner.  I also made corn cake, spanish rice, and a roasted corn salad.  All are exceptionally easy to make, and all are (I think) delicious.  I will do a separate post about the sides.  On to the tacos!

Your Ingredients:

Ingredients

  • Tortillas
  • Beans ( I use refried black beans)
  • Salsa
  • Shredded cheese
  • Olives
  • 3 bell peppers (one green, one yellow, and one red)
  • 1 chopped red onion
  • 1 package of fajita or taco seasoning
  • Olive oil
  • 1 avocado
  • Squirt of lime
The prep is pretty easy.  The only thing that needs doing is cutting the veggies.  I slice the peppers into thin strips and dice the onion.  Then put them in a pan with a little olive oil.
So colorful!

Saute the vegetables until they become a little softer (but not too soft!  You still want the crunch in the taco).  As they release more liquid, add the package of taco/ fajita spices to the veggies and continue to saute.
Starting to brown with the addition of the spices.

Then add a quick squirt of lime to the pan.

When the vegetables are sauteed to your liking, all that is left to do is heat up the refried beans and slice up an avocado.  I like to layer the beans and the cheese right on the tortilla, throw it in the microwave and melt the cheese, and then put the rest of my toppings on.
